Preheat oven to 425° F. Grease a baking sheet with nonstick spray.
Pour 1 tablespoon of canola oil into a large skillet, bring to medium-high heat. Place the ground chicken, garlic, and onion into the skillet. Cook and break apart for 3-5 minutes, until evenly browned. Drain excess fat.
Add the green chiles, chili powder, oregano, cumin, and paprika to the chicken in the skillet. Stir and cook for 2 minutes.
Remove the skillet from the heat. Stir in the lime juice, cilantro, salt and pepper. Then add 1 cup of the shredded cheese, stir until combined.
Spoon the chicken mixture onto one side of each tortilla. Sprinkle the remaining shredded cheese over the chicken. Fold over the tortilla.
Arrange the tacos on the baking sheet. Brush the remaining canola oil over the tops.
Place in the baking sheet in oven and bake for 12-15 minutes, until crispy.
Remove the tacos from the oven. Garnish the tacos with your favorite toppings and enjoy!

Crispy Baked Chicken Tacos
Serves 8
Ingredients:
2 1/2 tablespoons canola oil

1 1/2 teaspoons chili powder
