Greek-Style Chicken Meatballs





Serves 15
A Mediterranean twist on a classic.
Ingredients:
| 1 lb ground chicken |
| 2 tablespoons olive oil |
| 1/2 cup crumbled feta |
| 1/4 cup sun dried tomatoes |
| 1 egg |
| 1/4 teaspoon dill |
| 1/2 teaspoon salt |
| 1/2 teaspoon garlic powder |
| 1/4 teaspoon oregano |
| 1/2 cup panko breadcrumbs |
| 1/4 cup finely diced red onion |
Directions:
- Preheat oven to 400° F. Line a baking sheet with parchment paper.
- Combine ground chicken, olive oil, feta, tomatoes, egg, dill, salt, garlic powder, oregano, panko breadcrumbs and red onion in a large mixing bowl. Mix together until well combined.
- Scoop out and divide mixture into 15 portions. Roll into meatballs. Arrange meatballs on the baking sheet.
- Place in the oven and bake for 25-30 minutes, until cooked through.
- Remove from oven and let rest for 2 minutes before serving.
