Avocado Cucumber Tomato Salad





Serves 2
Healthy, delicious and super simple to prepare.
Ingredients:
| 2 avocados | 
| 1 English cucumbers | 
| 2 tablespoons lemon juice | 
| 1 teaspoon sea salt | 
| 1 lb Roma tomatoes | 
| 1/4 cup chopped cilantro | 
| 1/8 teaspoon black pepper | 
| 2 tablespoons extra-virgin olive oil | 
| 1/2 red onion, sliced | 
Directions:
- Toss together avocado, cucumbers, tomatoes, cilantro and red onions in a salad bowl.
 - Drizzle lemon juice and olive oil over veggie mixture. Toss to combine. Season with sea salt and pepper.
