Greek-Style Sandwich





Serves 2
Crispy, delicious and oh so easy to make.
Ingredients:
| 2 tomatoes, diced |
| 1 slice red onion, cut in half |
| 1/2 green pepper, seeded, thinly sliced |
| 1 cucumber, thinly sliced |
| 1 tablespoon feta cheese |
| 1/2 teaspoon mint, chopped |
| 2 teaspoons extra virgin olive oil |
| 1 teaspoon red wine vinegar |
| Salt, to taste |
| Ground black pepper, to taste |
| 2 teaspoons mayonnaise |
| 2 whole wheat buns, lightly toasted |
Directions:
- In a medium bowl, combine diced tomato, onion, green pepper, cucumber, feta, mint, olive oil and vinegar; stir to combine. Season the tomato mixture with salt and black pepper.
- Evenly spread the mayonnaise onto the two bottom halves of the English muffins. Evenly divide the tomato mixture atop mayonnaise and top each sandwich with remaining English muffin halves. Press down and cut sandwich in half before serving.
