Cherry Balsamic Glazed Chicken

Ingredients:
4 boneless, skinless chicken breasts
Salt, to taste
Black pepper, to taste
1/2 teaspoon dried thyme
2 cloves garlic, finely minced
1 cup cherries, pitted, halved
1/4 cup balsamic vinegar
2 tablespoons honey
Directions:
Generously season both sides of the chicken breasts with salt and black pepper. Then sprinkle with the dried thyme. Set aside.
Add the garlic, cherries, balsamic vinegar, and honey to a medium saucepan. Bring to medium heat. Cook for 8-10 minutes, stirring occasionally, until the cherries soften. Remove from heat.
Bring a heavy skillet to medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6 minutes. Flip and cook for 4 minutes, then brush the cherry balsamic glaze generously onto the chicken. Cook for 3 minutes, undisturbed.
Remove the skillet from the heat. Allow to rest for 3 minutes.
Transfer the chicken to serving plates. Spoon any remaining glaze over the chicken. Enjoy!
