Chocolate Brownie Cookies
Serves 10
Ingredients:
1 cup dark chocolate, chopped
1/2 cup butter, chopped
2 large eggs
3/4 cup caster sugar
1/2 cup light brown sugar
1 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
3 tablespoons cocoa powder
Directions:
Preheat oven to 350° F. Line a baking tray with parchment.
Add the dark chocolate and butter to a pan. Set to low heat and stir until melted and combined.
In a mixing bowl, whisk together the eggs, caster sugar, light brown sugar until fluffy.
Slowly pour the melted chocolate mixture into the sugar mixture. Whisk until combined.
Sift and fold in the flour, salt, baking powder, and cocoa powder into the mixing bowl.
Divide the dough into 10 pieces and roll into balls. Arrange the dough balls on the baking tray and gently press down to flatten.
Place into the oven and bake for about 12 minutes, until edges are firm, and centers are soft.
Remove from the oven and rest for 10 minutes. Transfer to a cooling rack to cool completely.
