Slow Cooker Pulled Pork Dip

Serves 6


Ingredients:

3 lb pork butt roast
2 tablespoons paprika
2 tablespoons salt
1 tablespoon ground pepper
2 teaspoon garlic powder
1 can stewed tomatoes, 14.5 oz.
1 can corn, 15 oz.
1 can refried beans, 16 oz.
1/2 cup shredded cheddar cheese
Chopped green onions, for garnish

Directions:

  1. Combine the paprika, salt, pepper and garlic powder in a small bowl. Rub the pork roast with the spice mix. Place pork roast in the slow cooker bowl.
  2. Pour the can of stewed tomatoes over the pork roast. Place the lid on the slow cooker and lock shut. Set to high to cook for 4 hours or low for 7 hours.
  3. Set to warm and shred the pork roast in the slow cooker. Add the corn and refried beans. Stir together until combined. Let sit for 10 minutes.
  4. Transfer the dip to a large bowl. Sprinkle the shredded cheese over top and garnish with chopped green onions. Enjoy!
