Sausage and Cornbread Stuffing

Serves 8

A savory accompaniment to the turkey.

Ingredients:

1 lb pork sausage
1 stick butter, cubed
2 cups chopped onion
1 1/2 cups chopped celery
2 cups breadcrumbs
2 eggs, beaten
2 tablespoons dried sage
1 loaf cornbread, crumbled
Salt, to taste
Ground black pepper, to taste

Directions:

  1. In a skillet, cook the sausage until fully cooked. Transfer the sausage to a plate, cover. Drain fat from the skillet.
  2. Preheat oven to 350° F.
  3. Melt butter in the same skillet. Saute onions and celery until crisp-tender.
  4. In a large bowl, combine sausage, onions, celery, breadcrumbs, eggs, sage, cornbread.
  5. Transfer stuffing to a baking dish. Place in the oven and bake for 30-35 minutes.
