Fish and Shrimp Seafood Stew

Serves 6

A medley of seafood favorites.

Ingredients:

16 shrimp, peeled and deveined
1 cup clam juice
4 cloves garlic, crushed
1 lb fish fillets, cut into small chunks
1/2 cup dry white wine
1/3 cup extra-virgin olive oil
1/2 basil leaves, finely shredded
6 tomatoes, peeled and seeded
16 sea scallops

Directions:

  1. Heat oil in Dutch oven. Drop in garlic and saute on low heat for 2 minutes.
  2. Pour in wine and clam juice then add tomatoes, simmer for 10 minutes.
  3. Once liquids are simmering, add in fish, shrimp and scallops. Simmer additional 5-7 minutes. Stir in basil leaves and dish up soon afterward.
