Grilled Salmon Citrus Kabobs

Serves 8

Salmon rubbed with select spices and grilled to perfection.

Ingredients:

Olive oil cooking spray
1 teaspoon kosher salt
2 teaspoons sesame seeds
16 bamboo skewers, (soaked in water for 1 hour)
1 1/2 lb skinless wild salmon fillets, (cut into cubes)
2 tablespoons chopped fresh oregano
1/4 teaspoon crushed red pepper flakes
2 lemons, (sliced very thin)
1 teaspoon ground cumin

Directions:

  1. Heat grill to medium and spray grates with olive oil spray.
  2. Combine sesame seeds, oregano, red pepper flakes and cumin in a mixing bowl. Set aside.
  3. Thread and alternate salmon and folded lemon slices on bamboo skewers.
  4. Lightly coat kabobs with olive oil spray. Season with kosher salt and spice mix.
