Chicken Satay with Peanut Sauce





Serves 8
Perfectly flavored and easy to prepare.
Ingredients:
| 2 cloves garlic, chopped |
| 2 tablespoons say sauce |
| 2 tablespoons lime juice |
| 1 tablespoon ground turmeric |
| 1 lb chicken breast, boneless, skinless |
| 8 bamboo skewers, soaked in water for 30 minutes |
| 16 mushroom caps |
| 1 cup peanut sauce |
| Jasmine rice, steamed, optional |
Directions:
- Combine garlic, soy sauce, lime juice and turmeric in a large bowl. Cut chicken breasts in ½-inch pieces and toss in the marinade until evenly coated. Marinate for 2 hours in refrigerator.
- Preheat broiler or barbecue grill.
- Remove chicken pieces from marinade. Thread on skewers, placing a mushroom on each end.
- Place skewers under broiler or on the barbecue for 4 to 5 minutes on each side. Serve with jasmine rice and peanut sauce on the side.
