Baked Ricotta Chicken
Serves 4
Ingredients:
Canola oil, for greasing
4 boneless, skinless chicken breasts
1 teaspoon dried Italian seasoning
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 cup ricotta cheese
1/2 teaspoon salt
2 tablespoons olive oil
Marinara sauce, warmed, for serving
Directions:
Preheat the oven to 375°F.
Lightly grease a baking dish with canola oil. Then place the chicken breasts inside.
Combine the Italian seasoning, Parmesan, parsley, black pepper, garlic powder, ricotta, and salt. Stir until well combined and creamy.
Spread the ricotta mixture evenly over the top of the chicken breast. Then drizzle the olive oil over the ricotta-topped chicken.
Place the baking dish into the oven. Bake for 25-30 minutes, until the cheese is bubbly.
Transfer the ricotta chicken to serving plates. Serve with a side of marinara sauce. Enjoy!
