Spiced Pear and Cranberry Muffins

Savor the flavors of Autumn.

Ingredients:

2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
3/4 cup sugar
1/2 cup milk
2 large eggs
2 pears, peeled, cored, and diced
1 cup fresh cranberries

Directions:

  1. Preheat your oven to 375 degrees F. Place muffin liners in the tin.
  2. Whisk together the flour, salt, baking soda, baking powder, nutmeg, and cinnamon.
  3. In a separate bowl, mix in the butter, sugar, milk, and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently. Add the diced pears and cranberries.
  5. Fill the muffin tins about 2/3 full of the batter.
  6. Place in the oven to bake for 18-22 minutes, until golden brown.
  7. Remove from the oven. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
