Creamy Steak & Potato Soup

Serves 4

Rich, hearty, and satisfying.

Ingredients:

2 tablespoons butter
1 lb. steak, cubed, sirloin or rib-eye
1 yellow onion, chopped
3 cloves garlic, minced
4 cups beef broth
4 gold potatoes, peeled and diced
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 teaspoon salt
1 cup heavy cream
1/2 cup milk

Directions:

  1. Heat a large pot to medium-high heat. Add the butter. Once melted, add the steak and cook until evenly browned. Transfer the steak to a plate. Set aside
  2. In the same pot, add the onions and garlic. Saute for 2-3 minutes, stirring frequently.
  3. Add the beef broth, potatoes, pepper, paprika, and salt. Bring to a boil, then reduce the heat to low, let simmer for 15-20 minutes, until the potatoes are tender.
  4. Add the cooked steak back into the pot. Pour in the heavy cream and milk. Stir to combine. Let simmer for 6 minutes.
  5. Ladle into serving bowls. Enjoy!
