Apple Crumble Chia Pudding

Serves 3

A delicious make-ahead breakfast.

Ingredients:

For Chia Pudding:
1/3 cup unsweetened plain yogurt
1 teaspoon ground cinnamon
3 tablespoons apple butter
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1/4 teaspoon cardamom
1 medjool date
1/3 cup chia seeds
3/4 cup milk
For Crumble:
3 tablespoons rolled oats
3 tablespoons walnuts
2 medjool dates
For Stewed Apples:
1/4 cup water
2 sweet apples, diced
1/4 teaspoon cinnamon
2 teaspoons maple syrup

Directions:

  1. Combine the yogurt, cinnamon, apple butter, vanilla extract, salt, cardamom, medjool date, and milk in a blender cup. Pulse until fully smooth.
  2. Pour the chia seeds into a bowl. Then pour the blended mixture on top. Stir the mixture together and let sit for 5 minutes. Place the bowl in the refrigerator for at least an hour.
  3. Add the oats, walnuts, and dates to a food processor. Pulse the mixture together until crumbly. Set aside.
  4. Bring a saute pan to medium-low heat. Then add the water, diced apples, cinnamon, and maple syrup. Stir to combine and saute for 3-4 minutes.
  5. Divide the chia pudding between 3 jars. Divide the cooked apples among the jars, then sprinkle the crumble over the top. Enjoy!
