Buffalo Chicken Sloppy Joes





Serves 4
Spicy, tangy, and messy.
Ingredients:
| 1 tablespoon olive oil |
| 2 stalks celery, finely chopped |
| 1/2 onion, finely chopped |
| 2 carrots, finely chopped |
| Salt, to taste |
| 2 cloves garlic, minced |
| 1 lb ground chicken |
| 1 can tomato sauce, 8 oz. |
| 1/3 cup hot sauce |
| 4 hamburger buns |
Directions:
- Drizzle the olive oil in a large skillet and bring to medium heat. Once hot, add the celery, onion, and carrots. Season with a pinch of salt. Saute until softened. Then add the garlic and cook for 1 minute.
- Place the ground chicken in the skillet and break apart. Cook and stir until browned.
- Pour in the hot sauce and tomato sauce, stir to combine. Reduce the heat to low. Place a lid on the skillet and let simmer for 5 minutes.
- Remove the lid. Cook and stir for 2-4 minutes, until the sauce reduces and thickens.
- Divide the ground beef mixture amongst the buns. Enjoy!
