Pumpkin Pecan Cobbler

The best Fall flavors in one treat.

Ingredients:

1 1/4 cups flour
3/4 cup sugar
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup milk
1 1/2 teaspoons vanilla extract
1/2 stick butter, melted
1/2 cup pumpkin puree
For the Topping:
1/4 cup chopped pecans
1/2 cup brown sugar
1/2 cup sugar
1 1/2 cups hot water

Directions:

  1. Preheat the oven to 350° F.
  2. Stir the flour, sugar, cloves, nutmeg, cinnamon, salt, and baking powder in a mixing bowl.
  3. In a separate bowl, stir together the milk, vanilla extract, melted butter, and pumpkin puree.
  4. Add the pumpkin mixture into the spice mixture and stir together. Pour the batter into an 8-inch casserole dish.
  5. In a third bowl, combine the pecans, brown sugar, and sugar. Sprinkle the pecan topping over the batter, then pour in hot water. Place in the oven to bake for 40 minutes.
  6. Remove from the oven and let cool 10 minutes before serving.
