Cranberry Jalapeno Dip

Serves 32

A fantastic blend of sweet, tart, and spicy.

Ingredients:

12 oz fresh cranberries
2 fresh jalapeno peppers
1/4 cup green onion
2 tablespoons cilantro
1 cup sugar
1 tablespoon lemon juice
1/8 teaspoon salt
16 oz cream cheese

Directions:

  1. Place the cranberries into a food processor and pulse until smooth.
  2. Chop jalapeno peppers, green onion, and cilantro. Transfer to a mixing bowl.
  3. Add the cranberries to the mixing bowl. Stir together.
  4. Add the lemon juice, sugar, and salt to the mixing bowl. Stir together until blended.
  5. Cover and transfer to the refrigerator to chill overnight.
  6. Remove from the refrigerator and stir together.
  7. Pour into a colander to strain out the liquid.
  8. Place the cream cheese into a bowl and use a hand mixer to whip until smooth.
  9. Spread the cream cheese along bottom of a 9x9 baking dish.
  10. Pour the cranberry mixture into the baking dish. Spread out to evenly cover cream cheese.
  11. Place in the refrigerator until ready to serve.
