Ravioli Caprese-Style Salad

Serves 6
Easy, fresh and highly flavorful.
Ingredients:
1 package cheese ravioli, 20 oz. |
1/2 cup olive oil |
2 tablespoons balsamic vinegar |
3/4 teaspoon Italian seasoning |
1/2 teaspoon salt |
1/2 teaspoon ground black pepper |
4 cloves garlic, minced |
1 pint cherry tomatoes, halved |
8 oz fresh mozzarella pearls |
1/4 cup basil, chopped |
Prepared balsamic glaze, for topping |
Directions:
- Fill a large pot with water and bring to a boil. Once bubbling, add the ravioli and cook according to package instructions. Drain water from pot and rinse ravioli under cold water.
- Transfer the ravioli to a large mixing bowl. Drizzle with the olive oil, balsamic vinegar over the ravioli and toss to coat. Sprinkle Italian seasoning, salt, and pepper over the ravioli and toss to combine.
- Add the minced garlic, tomatoes and mozzarella. Toss to combine.
- Transfer the ravioli to serving plates. Garnish with fresh basil. Drizzle the balsamic glaze over top and enjoy!
