Simple Coconut Rice





Serves 4
Pairs well with just about everything.
Ingredients:
1 tablespoon olive oil |
1 cup jasmine rice |
1 cup coconut milk |
1 cup vegetable broth |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Pour olive oil into a saucepan and bring to high heat. Once hot, add rice and saut�© for 1 minute.
- Pour coconut milk and vegetable broth into the saucepan, sprinkle salt and pepper over top and stir together. Bring to a boil then reduce heat to low, cover and let simmer for 10 minutes.
- Turn heat off and let sit with the lid on for 10 minutes.
- Remove lid and fluff rice up with a fork and transfer to serving plates to enjoy.
