Beefy Gameday Chili





Serves 8
Homemade chili that's both hearty and flavorful.
Ingredients:
| 3 lb bottom round roast, cut into cubes |
| 2 teaspoons kosher salt |
| 1 teaspoon ground black pepper |
| 1/4 cup canola oil |
| 3 jalapeno peppers, seeded and finely diced |
| 3 yellow onions, diced |
| 4 cloves garlic, minced |
| 3 tablespoons chili powder |
| 1 tablespoon dried oregano |
| 1 tablespoon ground cumin |
| 1 tablespoon brown sugar |
| 1 can chopped tomatoes, 28 oz. |
| 1 can chopped green chiles, 4.5 oz. |
| 1 can black beans, drained and rinsed, 5 oz. |
Directions:
- Season beef cubes with salt and pepper. Separate into three batches.
- Heat oil in a large saute pan over high heat. Add beef to pan and brown 1 batch at a time for about 4 minutes. Transfer beef to a slow cooker after browning.
- Reduce heat to medium and add jalapeno, onions, garlic and. Cook for 5 minutes, then transfer to the slow cooker.
- Pour chili powder, oregano, cumin, brown sugar, tomatoes, green chiles and black beans into the slow cooker and stir together until well incorporated. Cover and cook on low for 4 hours.
